Sausages in Blankets
...or sausage rolls, or Eppie rolls, or whatever the heck you want to call them. This is my second day of Newsday recipes. Here are the rough instructions:
Thinly slice and then microwave half a red and half a green pepper. Roll out frozen bread dough (or in my case, previously frozen homemade whole wheat pizza dough) into 7-inch rounds. Spread a little mozz on there, a chicken sausage split lengthwise and dabbed with a bit of mustard, and the precooked bell pepper strips. Wrap the dough up and bake 'em until they're done.
These were surprisingly easy to make, even though it looks and sounds a little complicated. The rolls were really great; moist without being soggy, and tons of flavor. I suspect that they are only as good as the sausage that you use, however; and these can't possibly be the healthiest thing you'll ever eat, chicken sausage or no.

As per the menu suggestion, I sauteed some sliced zucchini and cherry tomatoes. Salt, pepper, thyme, olive oil. That's it. It would have been much better if I hadn't been a little too heavy-handed with the pepper, but it's pretty either way.

So we have two successful days of newspaper recipes. Truly remarkable! Day three I have to skip, because it's linguini with clam sauce and there is a member of my household that is too little to eat shellfish yet. Day four I'm a little nervous about, on account of the potential for gut-busting heaviness... but you'll hear about it, all in good time.


I'd like to see what the nutrition information is compared to Hot Pockets.
The zucchini and cherry tomatoes is right up my alley, though. It looks really good.
