Spinach Puff Pastry Quiche

Preparation time: 10 minutes
Cooking time: 25 minutes

Ingredients:
* 1 sheet frozen puff pastry, thawed
* 3oz cream cheese
* 1/3 cup half and half
* 3 eggs
* 1 10oz package frozen chopped spinach
* 1/2 cup grated cheddar cheese
* 1/4 cup grated parmesan cheese
* 2 green onions, sliced
* 1/4 tsp salt
* 1/4 tsp pepper

Preparation:
Thaw spinach or cook slightly in microwave until no longer frozen. Preheat oven to 425F. Roll puff pastry to 11-inch square. Line 9 inch glass pie plate with pastry, trimming edges. In medium bowl, Beat cream cheese until smooth. Gradually beat in half and half and eggs. Drain spinach, squeezing out as much water as possible. Mix spinach, onion, cheeses, salt and pepper into cream cheese mixture. Pour into prepared crust. Bake 25 minutes, or until crust is golden brown and filling is set. Cool 10 minutes before serving.
