Grilled Spiced Chicken with Tomato Pepper Sauce

Preparation time: 5 minutes
Cooking time: 30 minutes

Ingredients:
For Sauce:
* 1 medium onion, chopped
* 1/2 celery stalk, chopped
* 1/2 orange bell pepper, chopped
* 2 garlic cloves, minced
* 1 Tbsp olive oil
* 3 plum tomatoes
* 1 tsp fresh thyme, minced
* 1/2 cup fat-free chicken broth

For Chicken:
* 4 skinless, boneless, chicken breast halves
* 1.5 tsp salt
* 1 tsp ground cloves
* 2 tsp ground black pepper
* 2 tsp ground corriander seed
* 2 bay leaves, crumbled

Preparation:
Sauce:
Saute onion, garlic, celery, and bell pepper in olive oil over low heat until celery is softened. Add tomatoes, thyme, and chicken broth. Simmer sauce 25 minutes, or until liquid is almost evaporated. (Sauce can be made ahead and refrigerated, covered. Reheat on stove before serving with chicken)

Chicken:
Mix together salt, spices and crumbled bay leaf. Pat chicken dry and rub with spice mixture. Grill chicken on a lightly oiled rack approximately 5 minutes per side, until cooked through. Serve chicken with tomato pepper sauce, garnish with sprigs of thyme.
