Shrimp Asparagus Stir-Fry

Preparation time: 10 minutes
Cooking time: 5 minutes

Ingredients:
* 1/2 lb shrimp, peeled and deveined
* 8 shoots asparagus, in 2-inch segments
* 6 scallions, chopped, with greens
* 1 green or red bell pepper, chopped
* 1 cup eggplant, cubed
* 2 cloves garlic, minced
* 2 Tbsp soy sauce
* 2 Tbsp white wine vinegar
* 1/2 Tbsp sesame oil

Preparation:
Heat oil in a wok or large frying pan. Add asparagus and shrimp. Cook, over high heat, sitrring often, until asparagus is about halfway done, then add the rest of the vegetables and the garlic. Sprinkle soy sauce and white wine vinegar over the mixture, then continue to cook, stirring frequently, until vegetables are tender and shrimp is cooked thoroughly.

Serve alone or over rice or egg noodles.
