Cornbread

Preparation time: 5 minutes
Cooking time: 20 minutes
Ingredients:
* 1 cup yellow corn meal
* 1 cup unbleached flour
* 1/4 cup sugar
* 4 tsp baking powder
* 2 eggs
* 1 cup skim milk
* 1/4 cup canola oil
* 1 Tbsp canola oil
Preparation:
Pour 1 Tbsp oil into cornbread skillet or round glass baking dish and place in oven. Preheat oven to 425 degrees. In large mixing bowl, mix together corn meal, flour, sugar, and baking powder. Add eggs, milk, and 1/4 cup oil. Stir until mixed and creamy. Remove preheated skillet or dish from oven, and pour in batter. Return to oven and bake 15-20 minutes, or until top is golden and a toothppick inserted into the center comes out clean.
