White Bean Soup

Preparation time: 10 minutes
Cooking time: 1.5 hours, plus soaking time


Ingredients:
* 1 lb small white beans
* 1 large white onion, chopped
* 4 cloves garlic, minced
* 1 tsp black pepper
* 1 tsp dried thyme
* 1/2 tsp dried parsley
* 1 3/4 cup fat-free chicken broth
* 3 cups water


Preparation:
Rinse and sort beans - soak overnight. Drain soaked beans. In large pot, add beans, water, and chicken broth and simmer 1 hour. In nonstick skillet, saute onions and garlic until onion is translucent, approximately 5-10 minutes. Add sauted onion and garlic, parsley, thyme, and pepper to simmering beans. Simmer another half hour or until beans are tender but not overcooked, stirring occasionally. In small batches, puree half of the beans in food processor and return to pot.
